Red pepper is a red berry fully ripe on the vine that is selectively harvested and dried in the sun. The collection takes place from the end of January to May.

 

Red and white peppers are the rarest types of Kampot pepper due to the difficulty in picking ripe berries. These varieties of Kampot pepper are the most appreciated by gourmets.
